The Fairmont Empress

At the Fairmont Empress Hotel they buy fresh local fruit, veggies and meat for their Empress Room Restaurant. They are a member of the Island Chefs' Collaborative (ICC) which supports a network of local farmers. The Empress also has a "Go Green, Stay Green Package" which offers a 3 hour eco-whale watching tour, as well as local organic wine and cheese served in your room, and a donation is made with every package purchased, to the Vancouver Island Marmot Recovery Center to help protect the endangered marmots. All rooms offer recycling, laundry options and many organic and sustainable meal options through in-room dining or at their restaurants in house.
